Lao Gan Ma is the famous chilli sauce brand from Guizhou, China, and its Chili Bean Sauce combines fermented black beans with chilli oil. Spoon it over noodles and rice, stir it into stir-fries and mapo tofu, mix it into dumpling dips, or top fried eggs with it. A spoonful goes a long way.
