Hokkigai is the Arctic surf clam, recognisable by its red-tipped flesh and sweet, gently chewy bite. These frozen pieces are graded M 51/60. Thaw them slowly in the refrigerator, then butterfly them over sushi rice as nigiri, add them to sashimi platters, or slice them into seafood and sunomono salads.
